Your dream holiday starts at Costa Rica’s capital city of San Jose, known locally as “Chepe.” Downtown San Jose has undergone a bit of a renaissance with a hotbed of creative start-ups including designer boutiques, a lively arts scene, microbreweries and a culinary revolution.

The next day you will go on a boat tour of the Tarcoles River to Guacalillo Mangrove Estuary, home to 300 species of native and migratory birds including caracaras, kingfishers, egrets, herons, patoos and the scarlet macaw. Make sure you have your binoculars at the ready.

You will then cruise to Nicaragua’s best surfing beaches at San Juan del Sur. The once sleepy village is now transformed into a lively surfer lifestyle with lots of fresh seafood restaurants and colourful, Victorian-era clapboard houses.

MS Roald Amundsen will then dock at Acajutla, El Salvador’s main seaport where harbourside restaurants serve typical local dishes. Try the national dish of El Salvador, a corn tortilla filled with cheese, pork, beans topped with sour cabbage salad. Finish your meal with a strong local coffee, as the region is famous for its aromatic coffee.

The cruise will then take you to Huatulco in Mexico, home to nine gorgeous bays, 26 pristine beaches, sheltered coves and beach resorts. The Bays National Park has hundreds of birds, making it a dream for nature lovers.

You will also visit Land’s End in Baja, California where the Sea of Cortes meets the Pacific Ocean teeming with sealife including manta rays, sea lions and whales.
