- More than 200 Oceania Cruises chefs will take part in The Floating Pastry academy.

In what’s being touted as a first for the cruise industry, Oceania Cruises has launched an onboard pastry and baking training program for its chefs.
More than 200 Oceania Cruise chefs are set to be put through the three-year program, created in partnership with The Butter Book digital training platform.
The aim of the academy, which mixes theory with practical assessments both online and onboard, is to create an industry-leading long-term model for pastry and baking training at sea.
Chef Eric Barale, Oceania Cruises Executive Culinary Director, and Chef Sébastien Canonne, founder of the The Butter Book, hatched the idea for the collaboration.
“This new academy reflects the respect we share for the traditions that shaped us, and for a passion for culinary excellence at sea,” Barale said.
“Culinary excellence starts with our people, and this new program will reinforce the consistency, refinement and artistic precision our pâtisserie demands, while nurturing the professional growth of our chefs.”

Chef Canonne added: “Investing in your people is essential to sustaining luxury. This academy creates a model designed for enduring excellence and innovation, supporting the fleet’s growth without compromising on technique or quality.”
The curriculum features:
- multi-year learning pathways tailored to pastry and bakery roles;
- mandatory foundations for new team members;
- role-based specialisation with defined progression;
- chef-led digital courses, quizzes and hands-on assessments;
- and certification at each stage to strengthen long-term culinary careers.
Next year, the ninth vessel in the Oceania Cruises fleet, Oceania Sonata, will feature the first restaurant at sea created in partnership with the Maîtres Cuisiniers de France (Master Chefs of France), marking another investment in French culinary heritage.
Oceania Sonata is the first of five new-generation ships and will sail her maiden voyage in August 2027.
