Azamara Cruises, like many other lines, have kept their crew on board while the industry waits out the halt in cruising.
But executive chef Colin Jones of Azamara Cruises is not one to be idle, turning the crew on board into chefs-in-training overnight.
The Azamara Quest is currently tied up in Abu Dhabi as she awaits the line to resume operations after May 11, 2020.
Chef Jones who is one to ‘never like to sit around’ has rounded up the crew on board for a beginner’s course in cooking.
So far, he has conducted classes on poultry and vegetable, butchery and most recently, stocks and sauce.
The newly minted commis chefs started in the classroom, learning about food and cooking from lectures and presentations slides but later had the chance to head to the kitchen for hands on work.
In the vegetable class, they were taught how to prepare ingredients like carrots, chopping them into nine different basic shapes.
The crew also got to learn how to section a whole chicken, gut and fillet fish and prepare other seafood like prawns.
And in just four sessions, the beginner chefs in their teams managed to cook and present dishes complete artful plating with finishing sauces.
